Shrimp Creole

Saute together:

2          -           tablespoons     butter

-           ½         cup                  onion (diced)

Add in:

2          -           tablespoons     flour

1          -                                   bay leaf  (crushed)

-           ¼         cup                  celery (diced)

1          -           teaspoons        parsley (minced)

-           ½         cup                  green pepper (diced)

-           -           dash                 cayenne

-           ¼         teaspoon          pepper sauce  (or 2 to 3 drops Tabasco)

-           ½         teaspoon          salt

1          15 oz. can                   tomato sauce

1          -           cup                  water

Cook slowly (30 minutes) until thick. Add in:

2          -           cups                 cooked shrimp (about 14 ounces)

Serve over:

1          -           cup                  cooked rice
